1. Cook Bacon and Mash (Start the Anchors)
- In a small skillet, cook the 3 slices of bacon until crispy. Remove the bacon and set it aside on a paper towel.
- Place the cauliflower florets in a small pot and boil until very tender (about 10–12 minutes). Drain extremely well, then return the cauliflower to the dry pot.
- Add the 1 Tbsp butter, 2 Tbsp cream cheese, 1/4 cup heavy cream, and garlic powder. Use a stick blender or potato masher to blend until perfectly smooth and dense. Stir in half of the fresh dill, season, and keep warm.
2. Prepare, Glaze, and Bake the Salmon
- Preheat your oven to 400°F (200°C). Line a small baking sheet with parchment paper.
- Pat the salmon fillet very dry and place it skin-side down. Season lightly.
- In a small bowl, whisk together the melted 3 Tbsp butter, Dijon mustard, sweetener, apple cider vinegar, and the remaining chopped dill until the glaze is rich and smooth.
- Brush approximately half of the glaze evenly over the top and sides of the salmon fillet.
- Bake for 12–15 minutes. During the last 2 minutes of baking, brush the remaining glaze over the salmon. For a caramelized finish, set the oven to broil for the final minute.
3. Assemble and Serve OMAD Style
- Create a generous bed of the ultra-creamy Dill Cauliflower Mash on your serving plate.
- Place the Glazed Salmon fillet directly on top.
- Arrange the 3 crispy bacon slices next to the mash.
- (Optional: Drizzle 1 Tbsp avocado oil over the salmon and mash for a final fat boost). Garnish with a fresh sprig of dill.
