Ingredients

Ingredients
Aromatic Broth Base
  • 2 cups low-sodium chicken or turkey broth
  • 1- inch piece fresh ginger sliced thin
  • 1 small clove garlic crushed
  • 1 star anise pod
  • 1 small cinnamon stick or a pinch of ground cinnamon
  • 1 tsp soy sauce or coconut aminos for soy-free
  • 1 tsp fish sauce
Noodles & Protein
  • 4 oz pre-cooked leftover turkey shredded or diced
  • 3 oz shirataki noodles or 1 cup zucchini noodles/zoodles
  • 1/4 cup bean sprouts optional, for crunch
Toppings & Finish (Crucial for Flavor!)
  • 2 Tbsp fresh cilantro chopped
  • 1 Tbsp fresh mint chopped (optional, highly recommended)
  • 1/2 small lime cut into a wedge
  • A few thin slices jalapeño optional
  • Pinch of red pepper flakes optional
  • Sriracha or Keto Hoisin Sauce to taste

Method

Directions
    Infuse the Broth
    1. In a small saucepan, combine the broth, ginger, garlic, star anise, and cinnamon stick.
    2. Bring the mixture to a simmer over medium-low heat.
    3. Reduce heat and let the broth gently infuse for 15 minutes. This allows the spices to fully release their flavor.
    Prep the Noodles
    1. If using shirataki noodles, follow the package directions: rinse them well under cool water for 2-3 minutes to remove the packing odor. Pat them dry or toss them in a dry pan for a minute.
    2. After the broth has steeped for 15 minutes, remove and discard the star anise, cinnamon stick, ginger, and garlic.
    3. Stir the fish sauce and soy sauce/aminos into the strained broth.
    Build the Bowl
    1. Place the shredded turkey and the prepared shirataki/zoodles into a deep, single-serving bowl.
    2. Ladle the hot, strained aromatic broth over the turkey and noodles. The heat of the broth will warm the turkey quickly.
    3. Immediately add the bean sprouts (if using), cilantro, and mint.
    Finish & Serve OMAD Style
    1. Garnish the bowl with a lime wedge, jalapeño slices, and red pepper flakes.

    Notes

Key OMAD tip: Squeeze the lime wedge right before eating—the fresh acid brightens the entire flavor profile!

Why This Breakdown Matters for OMAD

This recipe is structured to be an ideal OMAD (One Meal A Day) meal:

    • Protein Focused: At 34 g, this is a highly satisfying, muscle-sparing amount of protein, which is key for keeping you full until your next meal.
    • Excellent Carb Ratio: With only 7g of net carbs, this meal easily fits into the strict keto guidelines and leaves plenty of room for carbs from a side salad or other meal components if your OMAD is larger.
    • Hydration: The high volume of broth helps with post-holiday hydration and electrolyte balance, which is often needed after a celebratory meal.

🇹🇭 Marco’s Deep Dive: Your Next-Day Bone Broth Secret

You want the best possible flavor for this “pho” bowl. If you happen to have the cooked turkey carcass, you can create a super-charged, restorative bone broth base with almost zero extra effort.

    Quick Leftover Turkey Bone Broth

The day after Thanksgiving, put the carcass (bones, skin, and any remaining bits) into your slow cooker or a large pot.

    1. Add Aromatics: Toss in a couple of carrots, a celery stalk, a bay leaf, and a handful of black peppercorns.
    2. Cover with Water: Fill the pot with water until the carcass is submerged.
    3. Simmer (The Quick Way): Bring to a boil, then reduce heat and simmer, covered, for 4–6 hours.
    4. Use It: Strain the broth and use it immediately as the base for this Pho bowl.
    5. Store It: If you still have broth leftover, let it cool and then freeze it in single-serving containers (about 2 cups each). You now have nutrient-dense, single-serving bone broth ready for your next OMAD meal!

This ensures every single part of your global-inspired meal is utilized, embodying the zero-waste philosophy perfect for the single-serving keto cook.
