  • 2 large shrimp peeled and deveined

  • 1/2 clove minced garlic
  • 1 pinch saffron
  • dash of cayenne pepper (optional)

Method
 

Directions
    1. Build the Broth
    1. In a small, deep saucepan or Dutch oven, heat the olive oil over medium heat.
    2. Add the sliced fennel and onion. Sauté for 5–7 minutes until soft and translucent.
    3. Add the minced garlic and cook for 1 minute until fragrant.
    4. Stir in the drained diced tomatoes, thyme, orange zest, and saffron threads. Cook for 2 minutes.

    1. Pour in the seafood stock. Bring the mixture to a simmer, then reduce heat and cook gently for 15 minutes to let the flavors fully meld.
    2. Taste the broth and adjust the salt and pepper.
    3. Cook the Seafood
    1. Carefully add the pieces of white fish and shrimp to the simmering broth. Ensure the liquid mostly covers the seafood.
